The following is "Adrian's Pancake" recipe.
Note that this is a variation on the "British Pancake", also know as "Swiss" pancakes, or "Swedish" pancakes by some...
- 400g floor
- 2 eggs (shells removed)
- 1-2 seconds of oil (based on narrow <1cm lid on oil bottle)
- 3-4 table spoons of sugar
- 1 tea-spoon of vanilla essence
- pinch of salt
- Milk (unsure of quantity - enough to make mixture smooth flowing, but not too running
Add all ingredients.
Mix with blender, gradually adding milk until smooth, free flowing, but not too running.
Heat non-stick lightly greased/oiled pan to hot, add fixture.
A variation on this mixture is to add less milk to make it thick - this makes "Adrian's Scotch Pancakes". Optionally add dried fruit/raisins.
The mixture can be pre-pared in advanced, and stored in the fridge for up to a week.
